OUR STORY
It all started when my wife, Kristen, moved from Encinitas, California to join me in Basel, Switzerland in 2012. She quickly realised that she couldn’t find her beloved kombucha drink anywhere.
Around that time, I was discovering my own passion for fermentation, and was working on different sauerkraut and kimchi recipes.
When one Christmas came around, she thought she would fulfil both our needs ;) and gifted me everything one would need to start brewing kombucha.
To her dismay, it took me awhile to get around to it.
However, she persisted, and soon i stopped resisting, as i also realised that Basel lacked unpasteurised raw LIVE kombucha. After many moons of experimenting with different blends of teas, type of sugars and varieties of flavors, we arrived at the beverage we wanted to drink every day…and our neighbour’s kids too!

ABOUT KOMBUCHA
WHAT IS KOMBUCHA?
Kombucha is a fermented tea beverage that originates from Asia and is now becoming increasingly popular here as well. Slightly sparkling, sweet and sour in taste, kombucha is an ideal alternative to conventional soft drinks. The probiotic bacterias and enzymes that arise during the fermentation process support body&mind health and the gut.
HOW IT'S MADE
We carefully brew our blend of organic green and black tea.
Next, we add organic sugar to the tea.
The SCOBY (symbiotic culture of bacterias and yeast) is added and the magic begins.
During the fermentation process, the bacterias and yeast transform the sweet tea into a beverage full of healty probiotic bacterias , enzymes and vitamins.
After this 16 Day process, we flavor and bottle the Kombucha.
PHILOSOPHY
We brew organic kombucha, without additives, by hand, here in Kleinbasel. Our philosophy is to create an authentic and unadulterated beverage that is both refreshing and healthy.
